Aubergines

Ingredients
• 3-4 Aubergines – wash and leave as whole
• Oil for frying
• 3x Fresh Chillies - slice into strips
• 1x lemon - Squeeze for juice
• 1x Onions - slice into strips
• 1-2 tsp Soya Sauce
• 1-2 tsp Fish Sauce

Method of Cooking
1. Boil some Aubergines in water until skin colour changed
2. Remove skin and place aside
3. Fry some onions and chillies together and set aside
4. Add soya sauce, fish sauce, lemon juice and fried onions and chillies onto Aubergines.
